Quick No-Bake Cookies
No bake cookie recipes are nice because your kids can make almost by themselves and they are usually not too messy. Quick no-bake cookie recipes are easy to follow and don’t take much time. You can also change the ingredients and the cookies still come out great. Since you aren’t dealing with baking powder or baking soda it doesn’t matter if you put into a little too much of this or that or substitute corn flakes for corn chex.
Here is a no bake choc cookies recipe that has ingredients similar to trail mix. The recipe calls for walnuts or pecans but you can substitute any kind of nut you want – peanuts are usually the cheapest. This particular recipes for chocolate crunchies uses corn flakes but you can use any other kind of cereal you want. Raisins are another ingredient you could change to another sort of dried fruit.
I like this recipe because I usually have some variation of the ingredients on hand. Also, if you have to make a large number of cookies this recipe is cheap. If you use peanuts then raisins are probably the most expensive ingredient. You can buy bargain brand raisins and soak them in hot water for 15 minutes (make sure to drain the water away) and they will taste just as good as the name brand.
Chocolate Crunchies
Ingredients:
1/2 cup toasted walnuts or pecans (can use peanuts)
1/2 cup soft raisins
1 cup corn flakes
1 cup semi-sweet chocolate chips (can use milk chocolate, white chocolate or bittersweet)
Instructions:
1. Chop the nuts finely and toss them into a bowl along with the raisins and corn flakes.
2. Gently melt the chocolate chips in the top of a double boiler or in a microwave oven on low power. Pour the chocolate into the bowl and stir until all the ingredients are evenly coated.
3. Drop mounds of the candy mixture into paper petit-four cups or onto a sheet of was paper. You can use a cookies scoop or tablespoon for large cookies or a teaspoon for smaller cookies.
4. Chill for a least one hour before serving.
Makes 24 cookies.
